I'm sorry this happened. What I can tell you is that we put a lot of work into multimonitor stability in Plasma 5.25, which is currently released as a beta version. In this release, your panels shouldn't get lost like that, and if they do, there is now a "Manage desktops and panels" window accessible from the global Edit Mode toolbar that you can use to recover them. If you can upgrade to the beta, you may be able to use that window to recover your lost panel. Can you try that?
