It'd be great if there was an option to remove a signature from an already signed document.
(Technically you already can by printing to PDF, but 99% of users including me doesn't realise that)

I see no reason at all for why would be of any use. Please explain why it would be great with more detail.

My use case is an official governmental signing service only accepts documents that are not already signed, so anyone who needs to use this service would need it from time to time.
and I guess there are other signature software which don't work if a document is already signed
