SUMMARY
I would like to invert the colors with an option on the View menu and possibly a keyboard shortcut, but I have to go into the settings to invert the colors or revert them back.

STEPS TO REPRODUCE
1. Settings menu and Configure Okular (or just Ctrl+Shift+,)
2. Accessibility
3. Change Colors
4. OK

OBSERVED RESULT
No option on View menu

EXPECTED RESULT
Quick option with a shortcut

By now you can invert colors by a toolbar button. The button is probably not displayed in your toolbar by default.
