SUMMARY

At the moment I only rarely use the integrated viewer for video as the controls are quite limited yet.

However, I recently "found" the audio control on the right end of the progress bar and the RMB menu for selecting all sorts of info or actions. Progress!!

I would like to switch audio channels in videos either by selecting from a list or by switching through the available channels (next ... next ... next ... first ... next ...)

I understand that this would involve quite a bit of programming... Jesper said, it would be like re-implementing vlc (or parts of it). 

Would it then be possible and maybe easier, if the "viewer" for video playback could be selected as an external program directly (via the settings dialog)? As a shortcut for "RMB ... open with ... vlc" (or whatever your preferred video player is).

While I haven't looked into the implementation myself, I trust Jespers assessment of the situation.

As for the external playback suggestion:
Would it work for you to add this as a video backend option? Meaning you get a preview image with a "play" button similar to streaming sites, and no internal video playback at all...
