SUMMARY
For the past two days, every time I open a file on Krita it appears to be blurry, and only becomes clear once I zoom in on details.

Open the settings dialog, select the Display page and check whether canvas acceleration is enabled and what the scaling mode setting is.

I just checked and "Canvas Graphics Acceleration" is not enabled

Then please enable it and make sure "High Quality Filtering" is selected.

I enabled it, and the "Scaling Mode" options are: Bilinear filtering, Trilinear filtering and nearest neighbour, I don't see a "High Quality Filtering" option

Ok so try Trilinear, does it make it better?

At first it didn't change anything, but then I closed and reopened the file and it seems to have worked!! Thank you!
