Not sure how relevant CPU and GPU temp would be for the average use case, which is why it's not shown by default.

Windows shows GPU temp by default in task manager.

That's probably because playing video games is the only thing Windows is good for </snark>

Regardless, we aren't trying to make a Windows clone.
