SUMMARY
If you want to monitor your GPU loads in a multi GPU system using Plasma 5.19 new sensor widget only the primary GPU (I assume since usually they are counted by starting with 0 instead of 1) is visible as sensor source.

STEPS TO REPRODUCE
1. Have (at least) 2 NVidia dGPUs in your system
2. Use Sensor widget to display GPU loads
3. Find only 1 GPU is reported as source

OBSERVED RESULT
- Missing 2nd GPU

EXPECTED RESULT
- 2nd GPU as sensor source
