Since this behavior is commonplace today, especially in browsers, it would be cool to have okular close the tabs by middle-clicking them

This feature was added in 

  https://invent.kde.org/kde/okular/-/merge_requests/69

(i.e., very recently).  Please try a (very) new version of Okular.  Meanwhile, I will close your report.  Please reopen it if new enough version of Okular still don't work for you.

Ah that's nice. Still not implemented in Okular 1.9.3 in Manjaro KDE, but hopefully soon!
