I can confirm that this bug is still present in Plasma 5.15.3. And I don't think it's limited to dolphin. I have experienced many other applications just randomly disappearing (process still visible in ps -el but window just gone). As Patrick mentioned, it happens only under a Wayland session. No problems under X11. I'm using Arch, with intel graphics. Confirmed on Manjaro Stable, Dell Inspiron 15R SE, X11: various applications' windows disappear, but... I'm running X11. In my case more actions reproduce the defect than just that sequence mentioned by OP. I struggle to pin-point them: i.e. happened when I tried to save a file in Kdenlive - all windows disappeared. This happens when I've got a 2nd screen connected to laptop via VGA or disconnected. And I'm positive windows "disappear", because I can still see "running" marker on an icon on KDE panel and when I try to click, seems that nothing happens (this would normally be minimising a window to tray, then a second click brings the window back. It also happens when I switch from one window to another - will observe further and delete this line if I'm incorrect on this. It is very important to note that, at least in my case, this "disappearing windows" issue only happens when I click mouse. If I use, say Alt+Tab to switch windows or a key combination to bring up an app or window menu, then everything is OK. And I'm positive windows "disappear", because ps aux lists the process, I can still see "running" marker on an icon on KDE panel, and when I click that icon, seems that nothing happens (this would normally be minimising a window to tray), then a second click brings the window back (again, a normal action, except this time the window un-disappeared). It's despite the processes being active in "ps aux". What's worse is that I cannot restart kwin_wayland as all processes will be killed.
