Connecting to a public WiFi leaves traces as the WiFi owner can track and recognize the user by its unique MAC address, whenever the user connects to the network.

Windows 10 Pro for instance has an easy to use option to automatically spoof the MAC address at public networks.

I believe this means using "assigned-mac-address" property from NM's wired setting.

An option like this would be really great for privacy!
But I would want it not only for Wireless but also for wired with the exception, that if I'm in my "home network" not to do that as I might have made some static IP bindings based on MAC address in my router's interface.
