In previous versions, kmail's system tray used to show the number of new emails - in this version it just shows a * to indicate the presence of new emails which is less useful - say I'm aware of 3 new emails but don't want to read them - I might be interested when new email 4 or 5 turns up.  Previous I'd see 3 turn to 4 but now I just see * no matter what.

Can we have the # emails back as an option?

This is deliberate, as displaying an unread count doesn't work well with Plasma themed system tray icons.  See the duplicate bug and bug 279279 for more discussion.
