Once I select another, non-default aspect ratio, undo my crop and then crop again with a different selection I will have to to select my non-default aspect ratio again. Would be helping to have that saved on a per-photo basis if possible.

Some fixes have been introduced in this tool with next 5.8.0. Please test with current pre release bundle if the problem is reproducible :

Yes, the problem is also fixed with non-default aspect ratio. Keep in mind, however, that the tool's setting will save the settings depending on the orientation of the image.
