I have a color scheme that is mostly black/dark. While introducing the data into the snippets the color of the text is white and I can barely read it.

I have not been able to find the settings for it, so my guess is that it is not following any from the color scheme.

Moin Alex,

can you please try:
Go to Settings > Fonts & Colors > First Tab "Colors", scroll to Text Templates & Snippets.

That should work.
