It's a bit weirder even: Without headset: Mixer shows: Barts HDMI Audio, Internal Audio Analog Surround 5.1 Popup shows: Barts HDMI Audio, Internal Audio Analog Stereo With headset: Mixer shows: Barts HDMI Audio, Internal Audio Analog Surround 5.1, Logitech USB Headset Analog Stereo Popup shows: Logitech USB Headset Analog Stereo, Internal Audio Analog Stereo The Sound Menu (Popup) might not automatically add plugged devices. But there is a "configure" button in the Sound Menu, where you can set it manually. Can you try to do so?
