Could there be a default shortcut for the 'Properties' of the
current document?, it is ALT+RETURN in Evince (and Dolphin), it is
CTRL+D in Adobe Reader.

I don't see a need for a default shortcut for Properties, i do not think is not a commonly used shortcut and if a user really uses it a lot he can always add it himself using the shortcut editor.
