Digikam has a great balance of simplicity and power.  It's interface is fairly intuitive and students can use it on the linux computers in my room as well as on a mac or window machine if that's what they have at home.

I would like to use this as a standard tool in my science classes.  The 'insert text' tool is great and I really like it's semi-transparent background.  For this to be really useful students need a way of precisely labeling locations of their image.  For example, imagine students taking a picture of a flower from their home or elsewhere, then being able to label all the flower parts precisely and eloquently.

I am picturing this arrow/line tool would be located on some part of the text box.  When you click and drag from that location a line is extended.  A student would then 'drop' the tip of the line at whatever location of the image pertained to the text box.  It would be important that a student could re-select the tip of that line and move it as necessary.  This line tip would need to be able to be precisely located--not just to, for example, a 3 mm grid.  Also, in general it would be best if the line originated at the center of the text box, although of course, it wouldn't appear until it reached the edge of the text box.
