It would be nice to have the option to show the first and last page as single pages but the rest side by side. 

That way booklets could be read like a printed copy:

|2|3|
|4|5|
|6|7|
|8|

Besides: When I checked a PDF I created at the computer of a friend of mine with only acrobat reader, I though "they'll have such a mode for sure" and asked them to switch to dual-side mode because they could check the new pictures more easily that way. We couldn't find such a mode :) 
The dual-side mode is damn convenient and useful - many thanks for adding it!

Okular can already do that
Settings -> Configure Okular -> General -> View Options -> Center first
page
