At every start-up of kate the document list is sorted as opening order, even if you stored it as document name last time.

Works for me.

Does this happen if you close kate or if you shutdown kde  or in both cases?

Massimo: Ping. Do you use Kate sessions? If not, try Sessions > Save as Default.

Likely due to unnamed sessions not being saved. Hence, mark as duplicate.
