1. Activate "Hide empty groups"
2. Move the last contact out of a group -> the group vanishes
3. Use "Redo" -> the contact gets moved into the empty group but the group doesn't show up

Confirmed, although I guess you mean "undo" instead of "redo" - the contact disappears, and doesn't seem to even be in the group when I choose "show empty groups". This is svn trunk r828586 (pre-4.1)

Almost similar behaviour in KDE 4.0.99. The group vanishes due to the "hide empty groups" option and pressing "undo" moves the contact to the top level, not back in the group (fortunately the contact does not disappear as Philip says).

Works oK using SVN r918972 (undo moves the contact back to the correct group and the group gets shown).
