In current git, the default render output is Image Sequence. While ideally there would be some kind of "remembering" render settings, for now I would suggest that MP4 is set as the default, as it was before, since I am quite sure it's way more popular and needed than Image Sequence and as it appears to be the dominant video format on the web.
