It could be very useful if konqueror could store the sort order of each directory, so that if I come back to a directory, I retrieve the sort order I choosed for this one.

I saw no sort order information in the .directory files, it would be the right place AMHA.

For example, I sort the files by date in the directory where I put my mail. And often other directories are sorted by filetype.

Nautilus and Windows Explorer do that. So it is also "natural", I mean "known".

I saw the bug 31674: file manager does not retain sort order settings (KDE 2.2 !). It is the same wish I think, It is marked CLOSED because duplicated, but I didn't find the original bug.
